A New St. Martin’s Family Cookbook!

Collect those recipes and place in green folder outside office door. Remember to put your name on the recipe so it can be attributed to your family.   Also, include a few sentences explaining how the recipe is an important part of your family tradition or how it came to be in your collection.

Here’s a little one to get you started:

Schaum Torte

From the kitchen of Edythe Olson

Ingredients:

6 egg whites

2 c. sugar

1 tsp. baking powder

1 Tbls. vinegar

Directions:

Beat egg whites, adding in 1 c. of sugar gradually. Mix baking powder & other cup of sugar & add to mixture. Do

not be afraid to beat this. You can’t over beat it. The mixture must be stiff as for angel food cake. Mix in

vinegar. Pour about ¾ mixture in greased spring mold pan. Put rest of mixture on top in 5 large gobs; 4 around

sides & one in middle. Bake at 200 degrees for 2 hrs.  When cool, lift off the 5 gobs of meringue. Fill with one large can well drained sliced peaches, mixed with whipping cream (whipped stiff). Replace gobs. Put pan on large plate and refrigerate until time to serve.

My grandmother always made this as our dessert for Christmas dinner. I loved watching her make the meringue, and then lift the baked peaks off to fill the Schaum Torte with the whipped cream and peaches. –Debby Utterback
